Muffins which flour
I have started adding unsweetened shredded coconut and it is sooooo good. Definitely try adding some coconut. I could kill my 5th husband with this and I wouldn't have to add anything. Reviewed years ago and feel compelled to leave a second review. Come on, folks. This recipe is from an old cookbook of classic American recipes. This recipe is a great representation of what muffins actually were - prior to the oversized hunks of cake laden with corn syrup, preservatives and trans fats so commonly found in supermarket bakeries, Costco and Starbucks today.
They are not cake and they are not oversized. And they come from a time well before before nearly half of Americans were considered overweight. It is totally cool to prefer large, sugary, cake like muffins. I can see a low rating given your personal preference, but OMG - demanding that epicurious remove it from this site?
These muffins were brutal. The was no vanilla extract, leaving them tasting quite bland. There is to much flour. The batter was so thick I thought I was making bread, it was as thick as play-dough. There was also a lot of baking powder. I signed up just to give this review. This recipe was just brutal. Stir in milk and oil.
Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups. Variations: Blueberry Muffins: Add 1 cup fresh blueberries.
